Shami Kebab ( Beef Patty)

Shami Kebab is a small patty of meat with lentils, egg to hold it together, and spices. It’s eaten as a snack or an appetizer. Every home in India / Pakistan has their own recipe of Shami Kebab, i use my mom’s version which I think is the best 🙂 You can eat in a sandwich, or my favorite way with rice and khatti daal (sour lentils), or just on their own. Shami kebabs need a bit of patience to prepare but the reward is that you will always have something protein based in your freezer, ready within a few minutes when you are too tired to cook or have unexpected company.

I always keep a few dozen Shami’s in my freezer, they freeze well and can be defrosted and shallow fried on low heat.

Ingredients: 2 lbs boneless beef preferably chuck roast 2 medium potatoes – peeled and chopped 1 cup split benagal gram – soaked in cold water for about an hour 3-4 whole dried red chilies 1 tbsp. ginger garlic paste 1 tsp. garam masala ( Indian all spice blend) powder 1 tsp. turmeric powder salt as…

We caught some salmon on one of our trips to Alaska . Naturally it had to be frozen. The best way to preserve optimal flavor and texture is to thaw overnight in the refrigerator. Place the wrapped package on a plate and allow 8-10 hours . It turned out tender and flaky . A fabulous and healthy dish and elegant enough for entertaining.

Serves: 4-6 Ingredients: 1 whole wild salmon fillet (1.5-2lbs) 1/4 cup plain bread crumbs 1/4 cup grated parmesan cheese 2-3 cloves garlic smashed 1 tbsp fresh finely chopped herbs (I used thyme and chives) 2 tbsp melted butter Salt & Pepper to taste   Directions : 1. Preheat oven to 400º F. 2. Line a…

This is a Martha Stewart recipe but I increased the number of garlic and added cumin, paprika and chicken stock powder. Instead of sugar pumpkins, you can use other winter squash. Kabocha, calabaza, and Hubbard are the best alternatives. Choose a squash that feels heavy for its size and is free of soft spots. The soup can be garnished by drizzling garlic oil in circles over your soup or a adding a dollop of sour cream . I made this for my first thanksgiving when I hosted Chris’s family over for dinner and this soup was a super hit 🙂

A friend shared this recipe on her blog and I enjoyed making it. I added fresh ginger to the stalk which i think added additional flavor to it. You can also use mutton instead of chicken. You can serve it with yogurt raita or salad of your choice. I served it with tomato chutney and boiled beets. Yummy !

Ingredients: 1 whole chicken – cut into 8-12 pieces 1 whole medium onion – peeled 1 tsp. coriander seeds 2-3 cinnamon sticks 6 cloves 1 tsp black peppercorns 3 black cardamoms 6-8 garlic cloves whole 1 inch piece of garlic 6 dry whole red chilies 10-12 glasses of water 2-3 tsp. salt 3 cups of…
